Foil-baked Fish with Black Beans and Corn
This is basically a glorified version of the hobo dinner that I grew up eatingThe fish is coated in a compound butter made with chipotles, garlic, and orange zest, then cooked atop a bed of black beans and corn.
The butter melts into the fish, leaving it super flavorful, and then all the juices run down into the veggies underneath. This is a super-simple dinner that was ready in no time flat! Delish!
Ingredients
- 4 skinless white fish fillets (6 to 8 oz. each) and 1-inch thick
- Salt and pepper
- 4 Tbs. unsalted butter, softened
- 2 tsp minced chipotle chiles in adobo sauce
- 1 tsp grated orange zest
- 2 Tbs. freshly squeezed orange juice
- 2 cloves garlic, minced
- 1 (16-oz) can black beans, rinsed and drained
- 2 cups corn kernels
- 1/2 red onion, minced
- 2 scallions, minced
- 1/4 cup chopped fresh cilantro
Make It…
1. Adjust oven rack to lower-middle position. Heat to 450
2. Pat fish dry with paper towels. Season with salt/pepper. Using a fork, mix the butter, 1 tsp. chipotle, orange zest, half the garlic, 1/2 tsp. salt, and 1/4 tsp. pepper in a medium bowl until well-combined. Spread butter mixture over the fish.
3. Combine the beans, corn, onion, scallions, 2 tablespoons of cilantro, orange juice, remaining chipotle, remaining garlic, scallions, 1/2 tsp. salt, and 1/4 tsp. pepper in a bowl.
4. Lay four 14-inch lengths of foil on the counter and divide the bean mixture evenly over the lower half of each piece of foil. Top with fish, and fold the foil over the fish, folding the edges to seal.
5. Arrange the packets in a single layer on a rimmed baking sheet and bake until the fish is just cooked through, 15 to 20 minutes. Carefully open the packets and sprinkle with remaining cilantro. Serve.Source: America's Test Kitchen, The Best Simple Recipes
Balsamic Orange Ginger Glazed Cod
This Fish…is everything that it’s cracked up to be. A very light and perfectly seasoned fish while having a little sauce to drizzle over – or onto a bed of rice! This is Fish that is company worthy for sure!
I used the foil/packet method of cooking this fish. I am not quite sure why, it just seemed like the right thing to do. Truth be known… I was saving myself a little clean up.
Gather
· 1 package sablefish (black cod), thawed
· 2 tbs. honey
· 1 tbs. balsamic vinegar
· 2 tbs. soy sauce
· 1 tbs. orange zest
· 3 tbs. orange juice
· 1 tsp. ginger, minced
· 2 tbs. grape seed oil, or whatever oil you like to use
· salt to taste
· pepper to taste
· aluminum foil, recommended
Step by Step
1. Preheat the oven to 450.
2. Find a baking dish and lay and oversized piece of foil in it. Big enough to set the fish inside while still having the edges protrude.
3. Lay pieces of fish in the middle and add ingredients on top.
4. Add a second piece of foil over the top sealing the edges by folding (alternating the sides).
5. Place packet of fish (without the baking dish) in oven for 16 minutes, or until the fish is cooked through. It flakes beautifully and tastes even better.

Cornflake-Crusted Baked Cod
This Baked Cod is a snap to prepare.

Ingredients
- 1 Tbsp. olive oil
- 1 lb. cod fillets
- 1 Tbsp. Dijon mustard
- 1/2 cup crushed cornflakes
- 1 Tbsp. melted butter
Preparation
1. Preheat oven to 400 degrees F. Drizzle olive oil over a baking sheet.
3. Stir together corn-flake crumbs and melted butter. Sprinkle over cod fillets, pressing lightly with your fingers to make sure the crumbs adhere.
4. Place on prepared baking sheet.
5. Bake 15-20 minutes, until fish is opaque throughout and flakes easily with a fork.The baking time will depend on how thick the fillets are.
***Check at 15 minutes. If not done, continue baking, checking every 2 minutes until done.

Broiled Tilapia Parmesan
A little Fancy… It will be your Favorite Fish Dish!
Ingredients
· 1/2 cup Parmesan cheese
· 1/4 cup butter, softened
· 3 tbs. mayonnaise
· 2 tbs. fresh lemon juice
· 1/4 tsp. dried basil
· 1/4 tsp. ground black pepper
· 1/8 tsp. onion powder
· 1/8 tsp. celery salt
· 2 lbs. Tilapia fillets
Directions
1. Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
2. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season this with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
3. Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes.
4. Remove the fillets from the oven and cover them with the Parmesan cheese mixture. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to overcook the fish.

Ingredients
- 5 Tilapia pieces
- 7 corn tortillas (tear into very small pieces)
- 1 tsp. lime juice
- 2-3 oz. tortilla chips
- 1-2 jalapeno peppers (seedless and chopped)
- 1/4 cup cilantro
- 1/2 tsp. chili powder
- 1/4 tsp. paprika
- 1/4 tsp. garlic powder
- 1/4 tsp. ground cumin
- 1/4 tsp. onion powder
- 1/4 tsp. parsley
- 1 tsp. seasoning salt
- 1 egg (whisked)
Instructions
1. Pre-heat oven to 375 degrees
2. Put all of the ingredients (except egg and Tilapia) in blender and pulse a few times until a good consistency… like bread crumbs.
3. Dip the fish into the beaten egg and then into the crust mixture.
4. Place each one on a greased baking sheet.
5. Bake for 10-15 minutes (you will want fish to flake).

If you…like me, don’t drink Wine and only use it for cooking, you can simply pour the remainder into ice trays and freeze it into individual cubes to reserve for a later cooking use.
Ingredients
Balsamic Rosemary Glaze
- 1/2 cup balsamic vinegar
- 1/4 cup white wine (optional)… but it makes the dish
- 2 Tbsp. honey
- 1 Tbsp. Dijon mustard (I like Emeril's)
- 1 Tbsp. chopped fresh rosemary, divided
- 1 cloves garlic, finely minced
Salmon
- 4 (6 oz.) Salmon fillets
- Salt and freshly ground black pepper
- 2 tsp. canola oil, divided
Directions
1. Allow salmon to rest 10 minutes at room temperature.
2. Meanwhile, in a medium saucepan combine balsamic vinegar, white wine, honey, Dijon mustard, 1/2 Tbsp. of the chopped rosemary and the garlic. Heat mixture over medium-high heat and bring to a boil, then reduce heat and simmer over medium-low heat until sauce has thickened and reduced to 1/3 cup, about 13 - 15 minutes, stirring occasionally.
3. Remove from heat and pour into a heat proof dish (using a rubber spatula to get it all out) and allow to cool.
4. Season both sides of salmon with salt and pepper. Heat a large non-stick skillet over medium-high heat and add 1 tsp of canola oil. Once pan and oil are hot, add 2 salmon fillets and cook, without moving, until salmon has nicely browned on bottom, about 3 - 5 minutes.
5. Carefully flip salmon to opposite side and continue to cook 3 - 5 minutes longer until bottom is browned and salmon has cooked through. Rest in a warm oven (don't rest it in a hot oven; you don't want to continue to cook it.) If you have to skillets I would recommend just using both and cooking all of the salmon at once. Wipe skillet clean, add remaining 1 tsp oil, once hot repeat process with remaining 2 salmon fillets.
6. Serve warm… Drizzling each fillet with balsamic rosemary glaze and sprinkling tops with remaining 1/2 Tbsp. of rosemary.

Never much cared for FISH STICKS when I was
growing up. Until I met these…
So super easy to make!!
Outside Crispy and Crunchy… Inside perfectly Flaky!!
Ingredients
· 3 Tilapia fillets (I’m sure you can use another fish too)
· 2 egg whites, beaten
· 1 1/2 cups panko bread crumbs
· 1/2 teaspoon sea salt
· 1/2 teaspoon pepper
· 1/4 cup Parmesan cheese
Make them…
1. Preheat oven to 450. Lay a wire rack on a baking sheet and spray it with non-stick spray.
2. Cut the Tilapia once down the middle, then in half, creating four “sticks.” Season them with salt and pepper.
3. In a bowl, beat the 2 egg whites. In a separate bowl, add the panko, salt, pepper and Parmesan cheese.
4. Dip each fish stick in egg whites, than in the panko mixture, pressing to adhere. Lay sticks on the wire rack and spritz with olive oil.
5. Bake for 10 minutes, then flip and bake for 10 more minutes. Serve hot!
