"Go make yourself a dang Quesadilla..." Napoleon Dynomite

Pulled Pork & 

Caramelized Onion Quesadillas
          
 

Pulled Pork makes me so happy and I never mind 
having leftovers.
These Quesadillas make me even happier.

Ingredients:
·     3 tablespoons butter, divided
·     1 teaspoon olive oil
·     1 large yellow onion, sliced
·     Pinch of brown sugar
·     Salt and pepper, to taste
·     8 small tortillas
·     2 cups (cooked) pulled pork
·     2 cups shredded pepper jack cheese
·     bbq sauce for garnish/dipping

Directions:
1.    Melt 1 tablespoon butter in a large frying pan over medium-low heat.

2.  Once melted, add the olive oil and onions, stirring occasionally, until they are deep golden brown and caramelized - about 30 minutes. Add a pinch of brown sugar and season well with salt and pepper. Remove from heat and set aside.

3.   Lay 4 tortillas flat and divide cheese evenly on all four tortillas. Top with caramelized onions and pulled pork. Top with a second tortilla.

4.  Heat a large skillet over medium heat. Add a 1/2 tablespoon of butter to the pan and let melt. Add quesadilla and cook for about 2-4 minutes, until golden brown on the bottom. Carefully but swiftly flip the quesadilla, cook for another 2-4 minutes on the other side, or until cheese is melted.

5.  Repeat process until all 4 quesadillas have been cooked. Cut each quesadilla into 4 wedges and serve with a drizzle of bbq sauce.

MEXI CHEESEBURGER QUESADILLAS

All of your favorite Hamburger toppings nestled 
with Cheese inside a Tortilla.
I indulge in a Cheeseburger maybe twice a year. 
It's not that I don't like them… 
I just try to keep my distance… if I can help myself. 
Quesadillas…I eat those all of the time. 
AND… if you put the two together it is pretty much Heaven!
It tastes just like a cheeseburger...but WAY better for some reason.     Sooo Good.

INGREDIENTS
·     1/4 cup ketchup
·     1/4 cup mayonnaise
·     2 teaspoons sweet relish
·     1 pound ground beef
·     2 teaspoons Worcestershire
·     1 medium onion, sliced thinly
·     4 large tortillas
·     2 cups shredded cheddar cheese
·     pickle 
·     lettuce, tomato, and for topping
·     1/2 cup salsa

DIRECTIONS
1.      In a small bowl combine the ketchup, mayonnaise, and sweet relish. Spread each tortilla generously with the sauce on one side. Reserve the remainder for dipping.
2.    Brown the beef adding the salt, pepper, and Worcestershire while browning. Drain the fat. Add the onions when beef is almost done and brown until tender.
3.    Preheat skillet to medium heat and add some butter to the pan. Place one of the tortillas, sauce side up, on the pan and sprinkle the beef and onion mixture on top. Sprinkle with 1/2 cup cheddar cheese. Top with the second tortilla, sauce side down.
4.    Cook for a couple of minutes per side or until cheese has melted. I found it helpful to use two spatulas to flip the quesadilla easily.
5.    Slice each quesadilla into four pieces. Top with lettuce, tomatoes, and pickles. Dip into salsa for a spicy kick.

PIZZA QUESADILLAS 
These Pizza Quesadillas are one of the easiest and quickest types of Quesadillas you will ever make.

There is not much involved in this recipe, just a tiny amount of prep work.Works great on the Grill!!
Kids will LOVE them!!


Ingredients
·      ½ cup pizza sauce
·      6 (7 inch) flour tortillas
·      8 ounces shredded mozzarella cheese
·      ½ cup sliced pepperoni
·      3 tablespoons sliced pitted black olives
·      Butter

Cooking Instructions:
1.  Lightly butter one side of each flour tortilla. Heat a large skillet to medium high heat. Place the tortilla into the pan butter side down.

2.  Spread a thin layer of pizza sauce on half of a tortilla. Sprinkle a layer of cheese over the pizza sauce. Top with pepperoni and black olives. Cook until the cheese has melted and the bottom has browned.

3.  Fold the tortillas in half and press down the edges gently. Remove from pan. Repeat until all of the quesadillas are cooked. Slice each quesadilla into three triangles.

Bacon and Egg Quesadillas
  

  
These Quesadillas are a new family 
favorite for sure!!
There's really nothing NOT to love
About these Quesadillas.
Such a fun new twist on the 
basic bacon and eggs.
A simple and delicious 
Breakfast, Lunch or Dinner!!

YOU NEED…
·     4 medium flour tortillas
·     Salt and pepper
·     1/2 pound bacon
·     4 large eggs
·     4 ounces pepper jack cheese, shredded (about 1 cup)

MAKE THEM…
1. Working in batches, in a nonstick skillet, cook the bacon over medium heat until crisp; drain on paper towels. Leave about 2 tablespoons bacon fat in the skillet, reserving the rest of the fat. Cut the bacon strips in half.

2. Working in 2 batches, in the skillet, cook the eggs over easy, seasoning with salt and pepper to taste; transfer to a platter. Reserve the skillet.

3. Lay the tortillas on a work surface. Sprinkle each with 1/4 cup cheese; top with 1 egg and bacon strips, then fold to enclose.


4. In the same skillet, heat 1 tablespoon reserved bacon fat over medium heat, add quesadillas and cook, turning once, until crisp and golden, about 3 minutes.  STOP!  These babies are great on the Grill and you save about a bazillion calories!!


Buffalo Chicken Quesadillas
These Quesadillas are super easy to make because…           all you have to do is mix all the ingredients in one big bowl.Yep, that is it!

Prepare the mixture ahead of time and have it in the fridge so when you need it…
You can have a Quesadilla in a flash!
Long Live the Rotisserie Chicken…


Ingredients
  • 2 cups shredded rotisserie chicken
  • ½ cup buffalo wing sauce
  • 2 tablespoons ranch dressing
  • 2 teaspoons canola oil
  • ⅛ cup cilantro, chopped (optional)
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 4 flour tortillas (10 inches)
  • 2 cups (8 ounces) shredded Mexican cheese blend
  • ¼ cup sour cream for dipping

Instructions
1.            Heat skillet to medium heat.  In a small bowl, toss chicken, buffalo sauce, ranch, cheese, salt & pepper, and cilantro.
2.            Lightly grease pan with olive oil. Place tortilla on pan, top with ¼ of chicken mixture and fold in half. Allow to cook for 2 minutes and flip for 2 minutes on the other side.
3.            Remove from heat and repeat the process for all four tortillas. Cut each quesadilla into 4 portions.

Simple Dessert Quesadilla
There are no words to describe this Dessert. Make it!
I may or may not have stuck mine in a small bowl of vanilla ice cream….and I possibly could have drizzled a little bit of homemade Caramel Sauce in my bowl. HEAVEN!
Ingredients
  • Flour or Corn Tortillas
  • Chocolate Chips
  • Cinnamon Sugar
  • 1 tsp butter or margarine
  • Cream Cheese (softened)
Optional Additions
  • Sliced Bananas
  • Sliced apples
  • Coconut
  • peanut butter chips
  • nuts
  • and more
Instructions   
1.   Heat a skillet over medium heat. Melt butter or margarine in the skillet.
2.   Spread 1-2 tbsp. cream cheese sweetened to taste with cinnamon sugar over 1 tortilla.
3.   Top with 1-2 tbsp. chocolate chips and fold tortilla in half.
4.   Place tortilla in skillet and heat for 1-2 minutes on each side until crisp and golden
5.   Remove, slice, and serve.
6.   Repeat as desired.

Options
You can place any combo you wish in the tortilla. Here are just a few...
1.   Apple & Cream Cheese
2.   Banana & chocolate chips
Gluten Free
1.   Use Gluten free corn tortillas
Dairy free 
1.   Exclude the cream cheese and use a dairy free margarine or dairy free cream cheese substitute.
