Family Dinner... Family Tradition

Easy Caramelized 
Baked Chicken
I have a perfect chicken dinner for you. Perfectly easy that is. You do not have to use chicken fillets if you don’t have any… the recipe works well with any cut of chicken.

One little tip I have found when making this meal is to lay a piece of foil over your baking dish while it is baking and turn your chicken at least once. You should be able to tell just from site when the chicken is caramelized.

Ingredients
  • 6 large chicken Breasts
  • 2 tablespoons olive oil
  • 1/2 cup soy sauce
  • 2 tablespoons ketchup
  • 1 cup honey
  • 1 clove garlic, minced
  • salt and pepper to taste

Directions
1.    Preheat oven to 375 degrees F

2.  Place chicken in a 9×13 inch baking dish.

3.  Mix together the oil, soy sauce, ketchup, honey, garlic, salt and pepper.

4.  Pour over the chicken.

5.  Bake in preheated oven for one hour, or until sauce is caramelized.


Pizza Quesadillas
All of the flavors of a pizza all wrapped up in quesadilla form and topped with even more pizza toppings!  Kids (and grownups) will love these Pizzadillas!!

The basic idea is that you make a pizza quesadilla, stuffed with your favorite pizza ingredients including pizza sauce, mozzarella cheese, pepperoni and black olives, and then you top the quesadilla with more of the pizza toppings and quickly bake it to melt the cheese on top!

Tip: You want to make sure to toast the quesadilla well when you cook it so that the tortillas are nice and crispy so that they hold together even with all of the pizza sauce.

Ingredients
  • 2 (10 inch) tortilla
  • 1 cup mozzarella, shredded
  • 3 tablespoons Pasta/pizza sauce
  • 16 slices pepperoni
  • 1 tablespoon sliced black olives
  • 3 tablespoons pizza/pasta sauce
  • 1/2 cup mozzarella, shredded
  • 3 slices pepperoni
  • 1 tablespoon sliced black olives

Directions
1.    Heat a large pan over medium heat.

2.  Place one tortilla in the pan; sprinkle half of the cheese over it, followed by the pizza sauce, pepperoni, olives, the remaining cheese and finally the remaining tortilla.

3.  Cook until the quesadilla is golden brown on both sides and the cheese is melted, about 2-4 minutes per side.

4.  Spread more pizza sauce over the top of the quesadilla followed by the mozzarella, pepperoni and olives.

5.  Bake in a preheated 400F oven until the cheese has melted, about 5-10 minutes.


Of course you do not have to top the pizza quesadillas with more pizza ingredients and the pizza quesadillas are certainly tasty enough to go without the extra toppings!


Crock Pot Chicken Taco Chili
Great… maybe greatest school day dinner!  Easy and yummy!! Just look at that picture… enough said.

Ingredients
·     1 onion, chopped
·     1 16-oz. can black beans
·     1 16-oz. can kidney beans
·     1 8-oz. can tomato sauce
·     10 oz. package frozen corn kernels
·     2 14.5-oz. cans diced tomatoes w/chilies
·     1 packet taco seasoning
·     1 tbsp. cumin
·     1 tbsp. chili powder
·     3 boneless skinless chicken breasts
·     Chili peppers, chopped (optional)
·     Chopped fresh cilantro

Make this
1.    Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker.

2.  Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours.

3.   Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with grated cheese… Fritos… tortilla chips etc.


Slow Cooker Dr. Pepper 
Pulled Pork
Just toss your pork into the crock-pot with a few simple ingredients (one of them being Dr. Pepper) and 
let that baby slow cook.
This pork is loaded with great flavor! 
You will want to make this again and again.

INGREDIENTS
·     3-4 lb. Pork Loin Roast
·     Pork Rub or your favorite seasonings
·     12 oz. Dr. Pepper
·     Barbecue Sauce (to taste) I only use Sweet
Baby Rays

DIRECTIONS
1.    Season the pork with your rub on all sides.

2.  Place in slow cooker.

3.   Pour in Dr. Pepper.

4.  Cook on low 10-12 hours.

5.  Drain most of the liquid.

6.  Use tongs to shred pork.

7.   Add barbecue sauce to taste (I use a whole bottle)

8.   Stir well and reduce temp to warm for serving.


Slow Cooker Chile Colorado Smothered Burritos
I love nothing more than when I can throw something into the crock pot. 
This one literally took me two minutes. 
The result was fantastic!!
It had such an amazing favor and the beef was perfectly tender and just melted in my mouth.  And it was smothered in sauce and 
cheesy goodness.

Ingredients:
  • 2 pounds stew meat or other beef cubed
  • 1 large (19 oz.) can mild red enchilada sauce
  • 2 beef bouillon cubes (I used 3)
  • 1 can refried beans (optional)
  • 5-7 burrito sized tortillas
  • 2 cups shredded cheddar cheese

Make these
1.  Put the stew meat into the crockpot.  Put beef bouillon cubes on top and pour the enchilada sauce over the meat and cubes.  Cook on low 6-8 hours or high             3-4.  Cook until meat is very tender.

2.  Assemble burritos by spooning refried beans and spreading them on the tortilla.  With a slotted spoon, put about 1/2 cup of the meat mixture on top.  Roll up like a burrito and place seam down in a 9×13 pan.

3.  Pour remaining sauce from the crockpot on the top and sprinkle heavily with cheese.

4.  Broil in the oven until cheese is melted and bubbly for about 5 minutes.  Enjoy!
