Molly’s Slow Cooker Refried Beans
I made HOMEMADE from scratch Refried Beans… once. They turned out fabulous…and took me 3 hours to make! Enough said. Here is MY version of Refried Beans. Easy and Muy Bueno! Everyone loves them! I am including pictures for your viewing pleasure… There are no amounts of anything… make it however you like! It will turn out perfecto!
Spray your Crock Pot with Pam cooking Spray.
or use 3-4 cans of these.
Add as much of this as you like and stir till combined.
Add about 2 cups of this and do not mix in.
Cut a few slivers of this and place on top of cheese.
Cook on low and stir gently as the cheese and butter begin to melt. Remember you are heating your beans… not cooking them.
Taste and add more of any of the
above ingredients until the beans are just the way you like!
About 15 minutes before serving add a few tablespoons of this…
Serve like this… Watch them disappear!
Café Rio Cilantro Lime Rice
Rice with attitude! The flavor… the color… the rice that you will make over and over again… SO good!
Ingredients
· 4 cups water
· 2 cups white rice
· 4 teaspoons chicken bouillon
· 2 garlic cloves
· 1/2 onions, chopped
· 1 large lime
· 1/2 bunch cilantro, chopped fine
Directions
Chop onion and garlic small. In a food processor, chop cilantro (I remove stems). Set aside.
In a 4 cup measuring cup squeeze lime so that all of the juice is extracted. Fill the container with water until it equals 4 cups. (You only want 4 cups liquid total). Place liquid in a sauce pan, add bullion and bring to a boil.
When liquid comes to a boil, add onion, cilantro and rice. Cover and cook 20 minutes, or as long as instructed on the rice package.
If you can't find a large lime you may want to use 2 small ones.
I KNOW... I was going to give you another Rice recipe… but I am not. Seriously, if you are not making the Cilantro Lime Rice… just go get some of these…
And serve it like this…
I use this rice ALL the time… it is really delish.

Molly’s 2 Ingredient Guacamole
· Avocados (About 4 large) and Dry Guacamole mix.
I use this one. (2 packets... 1 mild and 1 spicy)
· Mash avocados to desired consistency and mix in packets. Add a squeeze of fresh lime juice if you like.
· Refrigerate and then eat …until it is gone!
I never make it any other way. This is fast and delicious!
Guacamole Muy Bueno
This guacamole recipe is super simple and fresh. It is also addictive. The best part about Guacamole is experimenting and making it yours.
Did you know that Super Bowl viewers will consume enough guacamole to cover a football field waist-deep in creamy green dip, according to the California Avocado Commission? I thought that was crazy cool! I just want to swim in it.
Ingredients:
· 4 avocados
· ½ teaspoon garlic powder
· 2 tablespoons onion powder or white onion, minced
· 1 jalapeño, minced (optional)
· 1 tomato, chopped
· 1 tablespoon salt
· 1 to 2 tablespoon fresh lime juice
Directions:
1. Cut the avocados in half. Twist to remove the pit. Scoop out the pulp. Place in a medium-size bowl and mash the avocados with a fork so that the mixture is a bit chunky.
2. Add the tomato, onion, garlic powder, and salt. Sprinkle the lime juice over all the ingredients and give everything a good stir, but don’t overdo it. Serve with tortilla chips.
