Soup of the Day...

Weight Watchers 0 Point Tortilla Soup
I’m not gonna lie, I have a bit of an obsession with this soup. It is one of my very favorite recipes in the world!!  Delicious and filling… you will want to double this recipe and keep in quart jars in the back of the fridge… you know, where no one looks because that involves moving something or (heaven forbid) bending at the waist.
The soup will be ALL yours!  It will be fine for about a week and a half in the fridge…or freeze it.  I always add more veggies and salsa than called for and season to your own taste. Chicken is a must for me.

·       1 cup onion, chopped
·       2 garlic cloves, chopped
·       3-4 green onions, chopped
·       2 (12 oz.) cans diced tomatoes (I use Fire Roasted)
·       4 cups low-fat chicken broth
·       1/3 cup salsa
·       1/2-1 red pepper, chopped
·       1/2-1 green pepper, chopped
·       3-4 celery ribs, chopped
·       1/3 cup fresh cilantro, cut small
·       1/2 teaspoon cumin
·       1/2 teaspoon chili powder
·       1/2 teaspoon basil
·       4 tablespoons fat free sour cream
·      4 tablespoons flour, to thicken (or Wondra)

Make it…
1.    Simmer onions, garlic & green onions in a large pot…sprayed with Pam, until tender. Add all the other ingredients and simmer until all veggies are tender.

2.   You can add cooked shredded chicken breast; divide the points by 9 servings. Add 2 toasted corn tortillas on the side… count your points.
