Southwestern Chopped Salad
w/Cilantro Dressing
Hello you gorgeous-nutritious and
delicious burst of color!
I just love this Salad!! I could eat it all… and I have! My mouth is watering just looking at this picture…
Ingredients
· Large head of romaine
· 15 oz. can black beans, rinsed and drained
· 1 large orange bell pepper
· 1 pint cherry tomatoes
· 2 cups corn (I used frozen, thawed)
· 5 green onions
Directions
Finely chop romaine, bell pepper, tomatoes, and green onions.
Place all ingredients in a large bowl and stir to combine.
Toss with desired dressing.

Lime Cilantro Dressing
Greek yogurt is a perfect healthier alternative for achieving creaminess and it works fantastic in this dressing.
You can serve it right away, or make it ahead of time to chill in the fridge so it's ready to go whenever you are. It's great on salads, wraps, drizzled on tacos for an extra flavor boost, and as a fun veggie dip. We love tossing it with Southwestern Chopped Salad - SO delicious!
Ingredients
· 1 cup loosely packed cilantro, stems removed and roughly chopped
· 1/2 cup plain Greek yogurt
· 2 Tbsp. fresh lime juice (about 1/2 lime)
· 1-2 garlic cloves
· 1/4 cup olive oil
· 1 1/2 tsp. white wine vinegar
· 1/8 tsp. salt
Directions
Puree all ingredients in a blender or food processor until smooth. Taste and adjust seasonings if necessary. Recipe yields 3/4 cup dressing.

Turkey Taco Lettuce Wraps
For a lighter alternative to Taco Shells,
these Lettuce Taco Wraps are fabulous! So So Good!!
Add your favorite toppings like reduced fat cheddar, light sour cream, chives, tomatoes or whatever you like on your tacos.
Making your own Taco Seasoning is healthier than buying packaged Taco Seasoning, and uses less sodium, no sugar, no preservatives and no msg.
Ingredients:
- 1.3 lbs 99% lean ground Turkey
- 1 tsp. garlic powder
- 1 tsp. cumin
- 1 tsp. salt
- 1 tsp. chili powder
- 1 tsp. paprika
- 1/2 tsp. oregano
- 1/2 small onion, minced
- 2 tbsp. bell pepper, minced
- 3/4 cup water
- 4 oz. can tomato sauce (El Pato if you like spicy)
- 8 large lettuce leaves from Iceberg lettuce
Directions:
1.Brown turkey in a large skillet. When no longer pink add dry seasoning and mix well. (Feel free to use store brand Taco Seasoning)
2. Add onion, pepper, water and tomato sauce and cover. Simmer on low for about 20 minutes.
3.Wash and dry the lettuce. Place meat in the center of leaf and top with tomatoes, cheese and salsa or whatever you prefer. (Some toppings extra points)

Lord of the Onion Rings
I am an Onion Ring groupie! I love them… I look for them on every menu… I have made many varieties… and I ashamed to say I could eat these little Rings of Love every day! One problem… they are a bazillion calories!
This recipe is SO perfect. One serving is the entire onion!! Honestly… I love these! When I am having a craving for Rings I make a batch and eat them… all.
I served Lord of the Onion Rings last 4th of July and the family devoured them! You will too!
· 1 large onion (Vidalia)
· 1/2 cup high-fiber bran cereal twigs (Fiber One Original)
· 1/4 teaspoon garlic powder, or more to taste
· 1/8 teaspoon onion powder, or more to taste
· 1/8 teaspoon salt, or more to taste
· Black pepper, to taste
· 1/2 cup fat-free liquid egg substitute
· Mustard or ketchup as dip, optional
MAKE THEM…
· Preheat the oven to 375 degrees F. Slice the ends off the onion and remove its outer layer. Cut onion into 1/2-inch-wide slices, and separate into rings. Set aside.
· Using a blender or food processor, grind cereal to a breadcrumb-like consistency. Season the crumbs with spices and transfer to a plate or bowl.
· Fill a small bowl with egg substitute. Prepare a baking sheet (or 2) by spraying with nonstick spray. Set aside.
· One at a time, dunk each ring in egg substitute, give it a shake to remove any excess, and then coat it in the seasoned crumbs. Evenly place rings on the baking sheet(s).
· Cook's Note: Use tongs or a fork to dip the rings into the egg substitute and cereal crumbs. It'll keep your fingers from getting eggy and crumb-covered. Don't pierce the rings with the fork; just balance them on it.
· Bake in the oven until the outsides are crispy and insides are soft, 20 to 25 minutes, carefully flipping rings over about halfway through. Enjoy!
· (Entire recipe): 155 calories, 1g fat, 515mg sodium, 41g carbs, 16g fiber, 7g sugars, 9g protein WW 4 points+ for entire onion!!
