ST. LOUIS-STYLE PIZZA

St. Louis-Style Pizza has a super thin crust topped with Pizza sauce, Cheese and Italian Seasoning.

It’s one of the Quickest Homemade Pizzas you can make... being the crust doesn't have yeast in it and it takes all of 12 minutes to bake!

If you have a Pizza Craving at Six you can be eating a fresh, hot square of Pizza by Six-Thirty.

Use a Pizza Stone for crispier Pizza. The Baking Sheet gives the crust a little bit of chewiness which, surprisingly... I really liked.

Ingredients

Crust
·      2 cups unbleached self-rising flour*
·      2 tablespoons olive oil
·      6 tablespoons water
·      *Substitute 2 cups all-purpose flour + 1 tablespoon baking powder + 1/2 teaspoon salt and increase the water to 1/2 cup

Toppings
·      2/3 cup pizza sauce
·      1 cup shredded sharp white cheddar cheese
·      1/2 cup shredded smoked provolone or mozzarella cheese
·      1/2 cup shredded Swiss cheese
·      Dried Italian or pizza seasoning

Instructions
1.   Preheat oven to 425°F and lightly grease two 12" round pizza pans, or a couple of large baking sheets.

Make the Crust
2. Mix the flour, oil, and water together - the mixture will be shaggy. Use your hands to gather it together and form into a ball. Divide it in two and form each half into a disk the rounder the better.
3.  Cover with saran wrap and allow it to rest 10 minutes to make for easier rolling - skip this step if you're in a hurry.
4. Grease a piece of parchment or wax paper about 12" square and set a circle of dough in the middle. Cover with another lightly greased piece. Use a rolling pin to roll the dough very thin - 1/8 inch or less.
5.  Place the dough on the prepared pans. Top each pizza with 1/3 cup of the sauce.
6. Mix the cheeses together and sprinkle 1/2 over top of each then season with Italian herbs or pizza seasoning.
7.  Bake the pizzas for 9 to 12 minutes or until the cheese is melted with a few golden brown spots and the edges/bottom of the crust are golden brown.
8. Remove the pizzas from the oven and let sit 5 minutes. Transfer to a cutting board, cut into squares and serve immediately.

BBQ BLT Pizza

BBQ BLT Pizza is a BLT Sandwich kicked up a notch!
Sweet BBQ sauce meets
Salty BaconJuicy Tomatoes, and Hearty Kale in this mouthwatering Homemade Pizza recipe.

Every Friday night growing up my
family ordered Pizza for dinner…
Anyway, Pizza Hut on Friday is fine…
but Homemade Pizza is even better.

Ingredients
·      4 slices bacon
·      2 cups chopped curly kale
·      1/2 tbs. extra-virgin olive oil
·      Salt and pepper
·      1/3 cup BBQ sauce (or more or less depending on how saucy you like your pizza)
·       2 vine-ripened tomatoes, seeded and chopped
·      4oz. shredded mozzarella cheese

For the Pizza Dough
·      1/2 cup warm water (think “hot-tub” temp – not Luke-warm, but not scalding)
·      1-1/2 tsp. instant dry yeast
·      1 tbs. honey
·      1-1/2 cups flour + more for kneading
·      1/4 tsp. salt
·      1 tbs. extra-virgin olive oil

Directions
1.   For the pizza dough: Combine water, yeast, and honey in a large glass bowl then stir to combine.

2.  Let sit for 10 minutes in a warm place (I put my bowl on a heating pad set to low heat) or until foamy.

3.  Add flour, salt, and extra virgin olive oil then stir until dough comes together in a ball.

4. Turn dough out onto a heavily floured surface then knead for 3 minutes, adding more flour as needed to prevent sticking.

5.  Spray a large glass bowl with nonstick spray then add dough and cover with a towel (don’t let towel touch dough.)

6. Place bowl in a warm spot (again, I placed mine over a heating pad set to low) then let dough rise until doubled in size, 45 minutes to 1 hour. You can cover and refrigerate the dough at this point for 1-2 days. Let come to room temperature for 30 minutes before continuing on to next step.

7.  When dough has 20 minutes left to rise, line a baking sheet with foil then place a cooling rack on top and spray with nonstick spray.

8. Lay bacon slices on top of cooling rack then place into a cold oven. Set oven to preheat to 400 degrees. Bacon will cook as oven heats up. Continue to cook at 400 degrees if the bacon still needs to crisp up a bit after oven has come to temperature (I needed about 5 extra minutes.) Cool slightly then chop.

9. Lightly massage kale with extra virgin olive oil, salt, and pepper in a bowl, and then set aside.

Finish Up
a.  Spray a pizza pan or baking sheet very well with nonstick spray then spread risen dough into a 12″ circle, or into an even layer on a baking sheet.
b. Spread BBQ sauce on top then sprinkle on kale, tomatoes, chopped bacon, and cheese.
c.  Bake for 10-15 minutes or until crust and cheeses are golden brown. Slice then serve.

Cheese-steak Pizza
Just take one bite...I dare you.
Classic Philly meets Pizza...LOVE IT
I am Hungry.

 What you Need…
  • 1 packet (2 1/4 tsp.) active dry yeast
  • 1 cup lukewarm water
  • 1 tbs. honey
  • 2 1/4 – 2 1/2 cups flour
  • 1 tsp. salt
  • 1/2 tsp. garlic powder
  • 1 tsp. oregano flakes
  • 2 tbs. olive oil, divided, plus more for greasing the bowl
  • 1/2 onion, sliced
  • 1/2 green pepper, sliced
  • 2 round cheesesteak patties
  • 1 tbs. Worcestershire sauce
  • 2 tbs. steak sauce
  • 1 jar Classico white pizza sauce
  • 6 to 8 slices provolone cheese

Make It…
1.   Add the honey and yeast to the water and stir to combine. Let stand for 7 to 10 minutes, while the yeast gets foamy.
2. Whisk the flour, salt, garlic powder, and oregano flakes in a large bowl. Make a little hole in the middle and pour in the yeast mix and 1 tbs. olive oil. Stir to combine.
3.  Knead with your stand mixer or by hand until the dough forms a ball. Knead for 10 minutes. Turn out and form into a tight ball.
4. Place dough into a well-greased bowl. Top with greased plastic wrap and let sit until doubled in size, about 1 hour, in a dry warm spot.
5.  Preheat the oven to 425 degrees for at least 40 minutes before cooking. Slide a rack to the bottom-most slot.
6. Preheat a skillet over medium high heat. Add the remaining 1 tbs. olive oil and swirl to coat pan. Sauté the onion and pepper for 5 to 7 minutes until soft. Push the veggies off to the side and add the steak patties. Cook according to directions seasoning with Worcestershire and steak sauce. Remove from heat.
7.  Turn the dough out onto a floured surface and divide into 2 parts. Roll one at a time into a round disk, sprinkling with more flour if needed to keep from sticking. If the dough pulls pack while rolling and doesn’t seem to want to create a disk, let it sit 5 minutes longer.
8. Slide the pizza dough onto parchment paper. Spoon the white sauce over the pizza, leaving 1/2 border for the edges.
9. Sprinkle half of the peppers, onions, and steak meat over top. Tear the provolone slices in half and place on top as well. Using the parchment paper, transfer the pizza to your baking sheet, or preheated pizza stone in the oven and bake for 10-13 minutes until edges are golden brown and cheese is browning. Carefully, remove the pizza from the oven and let cool for 5 minutes before slicing and serving. Repeat with remaining dough and ingredients.

S’mores Pizza Recipe
S’mores… the perfect summer dessert!
But, with hot temperatures, you may not always want to light a fire to make them.

Or… if you are like me, you don’t really have a place to light a fire that won’t get you arrested.

This recipe trades the traditional graham crackers for a pizza crust sprinkled with graham cracker crumbs.

Then, it is topped with chocolate and marshmallows that are baked until perfectly gooey.

What You’ll Need
·      1 can refrigerated pizza crust
·      4 graham crackers, crushed into crumbs {optional}
·      6 Hershey chocolate bars
·      1 bag of marshmallows

Let’s Make It
1.   Preheat oven as recommended in the pizza crust directions.  Spread pizza crust on baking sheet coated with cooking spray.  If using, sprinkle with graham cracker crumbs.

2. Partially bake pizza crust according to the directions.  The Pillsbury crust recommends baking for 7-8 minutes.  Top partially baked crust with chocolate bars.

3.  Top with marshmallows.

4. Place pizza back in the oven for 5 minutes.  Using a wooden spoon, gently push down on the marshmallows to flatten.  Bake for an additional 2-3 minutes or until marshmallows are lightly brown.  Slice and enjoy.

Strawberries and Cream   Dessert Pizza
Summer berries are my favorite, and putting them on top of a sugar cookie smeared with cream cheese and white chocolate?
Yes, please.

Ingredients
  • 1 batch (16 oz.) of your favorite sugar cookie dough… (I use store bought)
  • 1 cup white chocolate baking chips
  • 1 8 oz. cream cheese, softened
  • 1 cup strawberry jam or strawberry glaze
  • 3 cups sliced strawberries

Instructions
1.   Preheat oven to 350. Press sugar cookie dough into a 10-inch cast iron skillet or a 9x13 inch pan. Bake for 15 to 20 minutes, or until the dough is light golden brown. Allow the cookie to cool completely.

2. In small microwave-safe bowl, melt white baking chips uncovered on high for 45 to 60 seconds or until they are melted and can be stirred smooth.

3.  In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Stir in melted chips until blended. Spread mixture over crust.

4. Mix the 3 cups of sliced strawberries into the jam and spread over the top of the cream cheese filling. Refrigerate until ready to serve. This pizza is best eaten the same day.
