Grab and Go... Breakfasts!

     Breakfast Burritos

Breakfast Burritos are the perfect meal to make ahead and freeze…
This, my friends is saving you time and money!  They are delicious!!


Ingredients
·     1 lb. breakfast sausage
·     1 lb. bacon
·     1 cup chopped ham
·     2 pounds of red potatoes, cubed into bite size pieces
·     16 oz. cheese (any kind you like)
·     24 soft taco tortillas (I used flour)
·     12 eggs, extra-large
·     1/2 c milk
·     1/3 c olive oil
·     1 tsp. each:  Emerils Seasoning, Seasoning Salt or any seasoning you prefer
·     salt and pepper

Directions

Meats
1.    Cook bacon.
2.  Brown the sausage.
3.  Fry up the ham.

Roasted Red Potatoes
1.    Preheat oven to 450.
2.  Dry cubed potatoes with a towel to eliminate any extra water.
3.  Toss the potatoes with 1/3 c olive oil, 1 tsp salt, 1/2 tsp pepper.  Use additional seasoning (such as Emerils or Seasoning Salt) if desired.
4.  Roast for 30 minutes until golden brown.  Start checking at 20 minutes.

Scrambled Eggs:
1.   Whisk 12 eggs and 1/2 c milk in a bowl until well combined.
2.  Heat a large skillet with nonstick cooking spray (or melt 1 Tbs. butter) over medium heat.
3.  Spray skillet and add egg mixture.
4. Cook eggs, stirring occasionally until eggs are set.
5.  Season with salt and pepper to taste.

Tortillas
1.   Place 5-10 tortillas on a plate.
2.  Cover with a wet paper towel.
3.  Heat them in microwave for 30 seconds at 50% power.
4. This should be your last step.  Heat the tortillas in batches.

Putting it all together
1.   Set up an assembly line with all the ingredients.
2.  Place the tortillas on a large baking sheet or cutting board.
3.  Build your burritos  cheese, eggs, potatoes, meat
4. Fold in the sides of the tortilla.
5.  Roll burrito up.
6.  Pat firmly on top of the burrito making sure the seam is on the bottom.
7.  Make sure the burrito is tightly rolled.

Lets freeze these burritos...
1.   Line a baking sheet with parchment paper.
2.  Place burritos on the sheet, seam side down.
3.  Press down on the burritos again lightly making sure that the edges are tucked in.
4. Place baking sheet in the freezer for an hour to flash freeze the burritos.
5.  Remove from freezer and wrap burritos in plastic wrap individually.
6.  Place in a Ziploc bag.
7.  I ended up with 24 burritos.

To heat the burritos
1.   Remove plastic wrap.
2.  Wrap burrito in wet paper towel.
3.  Heat for 3 minutes on 50% power.
4. Serve with fresh salsa  yummy!

Tips
ü Want to go vegetarian?  Replace the meats with some sautéed peppers and onions.
ü Want bigger burritos?  Just use larger tortillas.
ü Need even more flavor?  Add in some sautéed veggies.

ü Make sure to serve with fresh salsa.

Breakfast 
Burrito Bites

These almost seem fancy, but the best part is    these are so easy!
You can also make them ahead, freeze them and just pull out one serving at a time for                                  breakfasts on the go.
Just reheat in the microwave and they are delicious!

You will need: 
·     8 eggs
·     1/4 cup milk
·     cheddar cheese grated
·     3 flour tortillas
·     salt and pepper to taste
·     toppings
·     (You can really use whatever you want. I used spinach, bacon, ham, red peppers... but other ideas include: sausage, mushrooms, hash browns, onion, tomatoes, basil, zuchinni, squash, etc.
·   You just have to make sure that the meat is precooked!!!

Make them…
1.    Preheat your oven to 350 degrees. Then, cut your tortillas into quarters. Grease a muffin pan and press a tortilla quarter into each spot. They don't have to be perfect, but do try to press the tortilla into the bottom to create a nice little cup. Set aside.

2. In a bowl, crack your 8 eggs and discard shells.

3. Add 1/4 cup milk and whisk well. You can add salt and pepper to taste. I leave it out because breakfast meats usually have salt. Set aside. 

4. Finely chop all of your toppings. I used spinach, ham, bacon, and red peppers, but I have used a lot of other things from my list above and they are all delicious. That's the fun part. You can play around with it and make all kinds of combinations.

5. Sprinkle each tortilla cup with the toppings.

6. Pour egg mixture over the toppings.

7.  Sprinkle cheese over each cup.

8. Bake, covered with foil, and in a 350 degree oven for 25 minutes or until egg is cooked through. I uncover mine for the last couple of minutes to make the tortilla edges crispy.

ü     To freeze: Set them nicely upright in a single layer on a parchment covered cookie sheet.
ü     Pop in the freezer. When frozen place in large Ziploc freezer bags… and back in the freezer they go!
ü     To eat, just remove desired amount from the bag, place on a plate and microwave till warmed through.

Breakfast Bites

Preparing a breakfast for your family ahead of time is a really good thing!
So make sure to have these around this Summer! 
Someone is ALWAYS going to be hungry!


To make these Yummy Cups of Deliciousness…

1.    Preheat your oven to 400 degrees and make sure you grease your muffin tins really well, making sure to get both the sides and bottom.

2.  Throw some Tater Tots in the microwave for a couple minutes to thaw. Then, place 3 in each standard size muffin tin. Take a small cup and squish them flat into the bottom of each tin. Bake your Tots for 10 minutes.

3.  While you are waiting for them to cook, you can gather and chop up the rest of your ingredients. TOTALLY WHATEVER YOU LIKE… You can use red and green peppers, and 2 of the awesome Farmland precooked meats sausage links and diced hamOne of the reasons I love this recipe so much is because you can sneak all kinds of healthy things into your Breakfast bites. Other ideas include: spinach, mushrooms, onion, tomatoes, basil, zucchini, squash, etc.

4. After removing your tots from the oven, lower oven temperature to 350 degrees. Sprinkle your toppings over each cup. I love that this meat is precooked because it saves so much time.

5.  Whip together 8 eggs and 1/4 cup milk with a fork.

6.  Pour your egg mixture in each tin.

7.  Sprinkle a little cheddar cheese on top of each cup.

Bake them at 350 degrees for about 20 minutes, or until the egg is cooked through. To remove from the pan, I ran a butter knife around the edge of each one to loosen it from the sides, and used a fork to pop them out.

ü     To freeze: Set them upright in a single layer on a parchment covered cookie sheet and freeze.

ü     Place in a gallon Ziploc bag and pop in the freezer. To eat, just remove desired amount from the bag, place on a plate and pop in the microwave. They warm up perfectly.


Breakfast Banana Pops

This is like Summer on a Stick… It’s especially great for kids!
They freeze…they are yummy… and pretty darn healthy!!  Great for Breakfast or a snack!!

·    Yogurt of choice (Whole soy, Almond Dream, Silk, etc.)

  • Granola of choice, or crushed cookies, or even graham crackers 
  • Add-on ideas: mini chocolate chips, coconut shreds, cinnamon sugar, raisins, etc.
  • popsicle sticks to insert in the bananas

                       
    Make Them…
    ·    Pour granola into a very shallow dish or plate.

    ·    Peel bananas, cut in half, and insert Popsicle sticks.

    ·    Dip into yogurt (or coat with a knife), then roll into granola and add-ons. (I stuck the chips on by hand, after rolling in the granola.)

    ·    Place on a parchment or wax-lined tray and freeze.

    ·    Keep uneaten pops in the freezer… in a freezer bag.

    Frozen Croissant 
    Breakfast Sandwiches
    In an effort to make these Summer days go smoothly…
    I am here to help you! These gems are easy to make, fast to heat and quick to be eaten!!


     Ingredients
    • 10 eggs
    • 1 pound of bacon
    • 12 slices cheese
    • 12 croissants (you can use English Muffins)

    Instructions
    1.    Slice croissants in half, and freeze on a lined cookie sheet until frozen.

    2.  Cook bacon, drain then freeze on a lined cookie sheet until frozen.

    3.  Freeze slices of cheese (in a single layer) on a lined cookie sheet until frozen.

    4.  In a small bowl, scramble raw eggs.

    5.  Heat a large greased pan and add eggs.

    6.  After about 4 minutes, turn the eggs (it will look like a huge pancake)

    7.  Cook for another 3 minutes.

    8.  Remove large egg (pancake looking) and place on large cutting board.

    9.  Using a 3 in diameter round cup or cookie cutter, cut out egg rounds.

    10. Freeze on a lined cookie sheet until frozen.

    11. Once everything is frozen, assemble the sandwiches.

    12. Wrap sandwiches in wax paper, then plastic wrap and freeze for up to 3 weeks.

    13.When ready to eat, remove plastic wrap and microwave for 2 minutes.

    Frozen Smoothie Packs

    A healthy and quick Breakfast (or snack) for these 
    HOT Summer days inexpensive and yummy!


    Skinny Green Monster
    ·     1 banana
    ·     2 cups spinach     
    ·     1 tbsp. peanut butter
    ·     3/4 cup unsweetened almond milk
    ·     1/2 cup plain fat-free Greek yogurt

    Slammin' Sunrise Green Smoothie
    ·     2-3 cups spinach  
    ·     1 cup unsweetened vanilla almond milk
    ·     1-2 cups strawberries
    ·     1 cup blueberries
    ·     1/2 banana
    ·     2 tbsp. flaxseed

    Green Apple Smoothie
    ·     1 cup kale
    ·     1 granny smith apple                           
    ·     1 banana
    ·     Ice

    Green Fruit Smoothie
    ·     1 cup frozen fruit
    ·     1 cup vanilla almond milk
    ·     1 handful spinach
    ·     1 tbsp. flaxseed

    Just Peachy Green Smoothie
    ·     1 banana
    ·     1 cup spinach
    ·     2 large peaches
    ·     1 3/4 cup unsweetened almond milk
    ·     1 cup ice

    Double Green Smoothie
    ·     1 1/2 cup unsweetened almond milk
    ·     1 banana
    ·     1 cup kale leaves
    ·     1 cup spinach leaves
    ·     1/2 cup fruit

    Note: When preparing these as frozen packs, you will include everything in a bag except the milk and/or ice. The milk and ice need to be added at the time you blend it to help out with the consistency.

    1.  Label the Bags
    Once you've decided which smoothies to make, label the bag. Be sure to include how much milk and/ice to include when you're ready to blend it.

    2.Grocery Shopping
    Decide on how many smoothies you want to make and which recipes you are going to use. Create a grocery list of items you'll need. The nice thing about these smoothies is that they're all pretty similar and you don't need a huge variety of items. 

    3. Prepare the packs
    Gather all of the ingredients for each recipe and stuff each bag with the desired items. I used frozen spinach and fruit which made the process much faster. 

    4.Ta da!
    That's it! Just remember to add the milk and ice later and you're all ready to go! The best part about these recipes is that each one is under 200 calories and super healthy! It's a sneaky way to get your kids and husband to eat healthy too!
